Florida Blueberries Make for Mouthwatering Bliss

Blueberries are the starring ingredient in classics like blueberry pancakes or muffins. But there’s plenty more you can do with these tasty little berries than these tried-and-true recipes. In this article, we’ll take a look at some of the more unique baked goods you can make with Florida blueberries.

Blueberry Breakfast Cake

Ingredients
- 2 cups flour, plus ¼ cup
- ½ cup sugar, plus ⅓ cup
- 2 tsp baking powder
- 1 egg, beaten
- ½ cup milk, plus 2 tbsp
- ¼ cup butter, softened, plus 3 tbsp cold butter
- 1 tsp lemon zest
- 2 cups blueberries
- 1 tsp cinnamon, plus ½ tsp
- 1 tsp nutmeg
- ¼ cup chopped walnuts
- ½ cup powdered sugar
Instructions
Begin by preheating your oven to 350 degrees F and greasing a 9 inch square pan.
Meanwhile, combine 2 cups flour, ½ cup sugar, 1 tsp cinnamon, 1 tsp nutmeg, and 2 tsp baking powder in a mixing bowl. Cut softened butter into small pieces then add it to the bowl along with the egg, ½ cup milk, and lemon zest. Mix until dry ingredients are just moistened.
Fold in the blueberries, then spread the mixture in your baking pan.
Next, make the topping by combining the remaining sugar, flour, and cinnamon with the chopped walnuts in a food processor. Add cold butter and pulse until mixture is crumbly. Sprinkle over the batter, then bake in the oven until set, about 45 minutes.
While the cake bakes, combine the powdered sugar and milk until it’s a drizzling consistency. Drizzle over top of the cooked cake and let set before enjoying.

Blueberry Coconut No-Bake Cheesecake Bars

Ingredients
- 2 ⅓ cup cashews
- 1 cup almonds
- 1 cup pitted dates, plus 5 more pitted dates
- ⅓ cup coconut cream
- 2 tbsp coconut oil
- 2 tbsp honey
- 1 tsp vanilla extract
- Juice of ½ a lemon
- 1 cup blueberries
Instructions
First, soak cashews in boiling water for 10 minutes. Lightly grease a 9-inch square pan.
Next, process almonds and dates in a food processor until very finely chopped. Pour into the prepared pan and press it down with the back of a spoon. Place in the freezer to firm up.
Drain cashews and add half to the food processor along with coconut cream, honey, vanilla extract, lemon juice, and coconut oil. Process until smooth and creamy, then remove the pan from the freezer and layer the mixture on top. Return to the freezer for 30 minutes.
Meanwhile, make the topping by combining the blueberries, dates, and remaining cashews in a food processor and processing until smooth. Remove the pan from the freezer, top with the mixture, then return it to the freezer for one final time for an hour. Remove from the freezer 10 minutes before serving.

Blueberry Clafoutis

Ingredients
- 1 tbsp unsalted butter, melted
- 1 pint fresh blueberries
- ⅓ cup sugar, plus 1 tbsp
- Zest of one lemon
- 1 tsp vanilla extract
- 3 large eggs
- ⅛ tsp salt
- ¼ tsp almond extract
- ⅔ cup flour
- ½ cup heavy cream
- ¾ cup whole milk
- Powdered sugar for dusting
Instructions
First, preheat your oven to 350 degrees F and grease a 9 inch baking pan.
While the oven heats, combine the blueberries with 1 tbsp of sugar and the lemon zest in a mixing bowl. Toss to combine and set aside.
In a blender, combine vanilla extract, remaining sugar, eggs, butter, salt, almond extract, and flour. Blitz to combine then add in heavy cream and milk and blend until homogeneous and free of lumps. Set aside.
Take the berry mixture and spread evenly on the bottom of the pan. Pour the batter over top, ensuring it’s evenly spread, then bake until edges are golden brown and middle just set, about 35 minutes.
Remove and let cool for 10 minutes before serving dusted with powdered sugar.
